The Kawashiri Syuzoujou (Kawashiri Sake Brewary) in Hida Takayama.



 Takayama is the mecca of Japanese sake.
 This town is surrounded by mountains, the northern Japan Alps
 (Mt. Norikura,Mt.Ontake,etc)
 Here, sake-making benefits from the high altitude, cold winters,
 the water from the Mt. Norikura range, and the local rise for
 making sake.

 The Kawashiri syuzoujou was established in 1839, at the end of Edo era.
 We specialize in aged sake, which is the original Japanese sake.

 The ginjo-syu, dai ginjou-syu etc. are new types in the history of Japanese sake.
 Almost all these sakes are light and dry.
 In contrast to these, our aged sake is a full-bodied dry.
 It is aged from a few years to neary ten years. So, the five tastes ( sweet, dry, sour,
 bitter, and astringent) have blended well.
 Thus, it has a quiet taste ,aroma and a clear light amber color.

 The raw rice we use is all local grown rice, suitable for sake brewing.
 In our case, the "Kurando"( sake-brewing specialists) are involved in each stage of
 the process , from milling the rice to bottling and shipping. No machines are used.
 Everything is done by hand. Therefore, we can only produse a little.
